Estela’s Vegan Banana Nut Muffins

A great alternative for on-the-go breakfast.


  • 3 large very ripe bananas 

  • ¼ cup of non-diary milk 

  • ¼ cup of apple sauce 

  • 2 tbs ground flax seed 

  • 1 teaspoon pure vanilla or almond extract 

  • 1 ½ cups of flour 

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda 

  • ½ teaspoon of salt 

  • ½ teaspoon ground cinnamon 

  • ¼ teaspoon ground all spice 

  • ½ cups of sugar 

  • ¾ of pecans 

  • ¾ chopped walnuts


  1. Preheat oven to 376F.

  2. Mash the bananas, until they look pureed.

  3. Add the milk, applesauce, oil ground flaxseed and vanilla and stir vigorously. 

  4. Stir the dry ingredients slowly until they are incorporated, be careful not to over mix.

  5. Fold in the nuts  or chocolate if allergic ;) 

  6. Fill each muffin well most of the way full with batter & bake for 18 to 20 min
